Restaurant kitchen paint

I am looking to paint the kitchen in our restaurant, but as we are open 18 hours a day and I would really rather not come overnight, I was hoping to paint areas in the kitchen whilst food is being processed.
Do I need special paint? Odourless paint?

Pay someone to come in the 6 hours you are shut.....and you should charge more so you can afford a proper job done
