Restoring heavily distressed oak & keeping the distressing marks

I want to restore a wonderfully distressed oak tabke top.

First I have to get rid of old oil applications.

I was thinking of using oxalic acid.

Your ideas please.

Oxallic acid removes iron stains. AFAIK it isn't a degreaser so it won't remove oil finishes.
