Restoring old pine

I'm currently stripping down the wood from various parts of the house. Its victorian era pine; I'm wondering what is the best way to finish it off now that it is free of paint. Should I oil, wax or varnish?
What are the pros & cons? Is one better than the other in terms of durability, preservation or is the choice mainly aesthetic?

The various parts are:

A hall cupboard (floor-ceiling very large)
picture rails
interior doors & frames
Banisters

You are better off painting them like the Victorians did. It looks far more unauthentic.

If you must leave them pine then wax is the best in my opinion.
