If I opened up the roof space (took out the ceiling) could I take out the beams or will that cause the roof to collapse!!!

Yes it will, what is it you want to do ? Anything is possible by adding an extra purlin and supports.

I want to take down the ceiling and plasterboard up to the apex(ridge plate)
