Running pipes in Floor - Joints?

I need to run water and central heating pipes in the insulation under the screed in a barn conversion. How do I tee off given that joints must be accessible. This must be a common problem in barn conversions.

If theres not too many i tend tun run them all back to one place in plastic (yuk) as theyre reasonably well suited to that and have all the connections on a manifold
 
Id normally run 22 to the manifold and 15 to the rads, some use 10 but in plastic (YUK) the bore is tiny.

Depends largely on system layout etc, but unless its huge you should be ok

Unless you are planning to concrete over the joints then they will be accessible. To a degree!
The main priority is to pressure test all joints using a hydrostatic test procedure for the given pipe material.

If you are in any doubt though or doubt your ability to attain sound leak free joints then the manifold method as suggested above would probably be a better option.
Use 15mm for the rads.
 
If you had a 2kw radiator at the end of a 125m flow run and 125m on the return using 15mm pex with a standard 6m head circulator then that would be considered a bit excessive by most plumbers.
Generally on most domestic installations you will have pipe runs using 15mm that will be well within the range of most domestic circulators.
