Sand/Cement plaster on 1930's brick

You won't get any moisture trapped behind if you do it right. Dab or foam the perimeter of the board, (including around socket outlets, as per Nosey's picture.
Also make sure the roof and gutter above the wall and external drainage are all in good order. Also ensure that the room has adequate heating and ventilation.

Some insulated plasterboard is only 9.5mm plasterboard bonded to insulation.
Make sure yours is 12.5mm bonded to PIR, not EPS.

So, the kitchen has been boarded, couldn't get the 12.5mm type, had to do with the 9.5m. the overall thickness is 27mm, so it's hardly going to save the planet, but, it'll be interesting to see how you it performs.... expensive at nearly 60 quid a board !

I'm planning on painting the room, I'm assuming that the main priority is stopping any vapour getting to the cold brickwork behind the insulation....so paint with a 'sealing' paint like vinyl or acrylic. ?
