I have a nice old pair of brass taps but the covers are seized solid. Corrosion around the thread is presumably the culprit. I've tried easing spray and gentle persuasion in a wood vice to no avail. The covers are smooth round, i.e. no flats to grab hold of with a wrench. Any hot tips out there on how to free off these covers?

just heat them up with a small blowlamp that will make the cover expand then the will undo , use a small piece of cloth under the grips so you do not damage the smoothe surface.
