I will be tiling my bathroom with porcelain 600x300's and focusing on the tilebacker at the moment.

First Issue is I've got about 5mm out on a plumbline on a first metal stud wall and im sure the rest will be with issues so how to solve?

I've thought about shimming with some plastic packers, will this be suitable and solid enough? OR do I have other options?

Mate says I can get away with higher runs of tile adhesive with what ive got.

Yeah you can. It’s the choice between ball aching the tiling or prepping the plaster so the tiling’s easy. Both are valid. I’d personally rather sort the wall and know I’m not going to come unstuck on the tiling. You can also mitigate it a bit by thinking about the corners which is probably where this is going to get noticed. Ie. Set out the tiles so you don’t have a small sliver in the corner against the non-plumb wall so you don’t make it so obvious to the eye…
