get the T & G open the packaging then leave in bathroom to acclimatize
if you don`t you`ll find it will swell and bow!

You could mount the T&G onto 9mm ply to make it into a sheet. Use a good waterproof glue and plenty of it to stop the T&G warping.
You can get MDF pre routed to look like T&G.
Try and get MR (moisture resistant) MDF. You can always rout your own.
