Skimming against a brick wall

Hope someone could give me some tips, I want to keep one wall bare brick, the adjoining walls are boarded ready for skimming not sure how to keep the skim off the brick work (splashes and finishing against the brickwork ) is it best to cover the wall or clean off any splashes afterwards.
Not sure if I'm making sense, any help much appreciated

You could do either, prevention is always the best cure. So if your can cover the area I would. But plaster can be cleaned of walls, but if you can avoid it do so!
