Never used solder ring connections before.

Tried soldering a T joint which always seeps!

After all parts have been assembled, where should I hold the blowtorch?

In the middle of the whole connection attempting to melt the solder
at all three ends at the same time, or, from each end, one at a time ?

move the blowtorch along the lowest point of the fitting, heat rises.

keep the blowtorch moving, heating the whole fitting then when hot briefly concentrate on each ring, keeping the flame moving a little, until u see a thin ring of solder appear at the joint. you can add solder from a roll too if u want, lead free on drinking water.

remember to clean the pipe and fitting with steel wool and use flux.

make absolutely sure that there is no water drippin down the pipe b4 you solder... make sure your drain down properly... isolate completely any supply and play the torch up n down the pipework to get rid of any excess moisture.

doesnt solder melt and take at 386 degrees celcius?

You have underheated your joint / not cleaned it properly.
Dont use unleaded solder unless your working on the domestic side

Sorted! Keeping the torch moving and heating the whole joint first, seems
to be the key... adding extra solder too. Thanks for the advice!
