How about plastic surrounds for the sockets?
You remove the socket faceplate, put the plastic surround, (guard), in position and secure it with the socket faceplate. I assume the sockets are not so close to a water source that they will come into too much contact with water?

Sockets need to sit on top of splashback. You could apply clear silicon around any cuts .
Just needs long screws for sockets .
