what size cable should be used for economy 7 storage heaters ?

Generally 2.5 mm twin and earth from mains to wall switch and 1.5 mm heat resistant flex from wall switch to heater.

What is the kW of the heaters?

You will also need a B10 breaker in the board to feed it from.
