Sunflowers

I have a few sunflowers still going in the garden. What should I do with these when they start to die off? Do I just dig them up and plant new next year?

If they have good sized seed heads, let the birds eat them.
Cut down and compost the stems.
Plant new seeds in the spring.
 
I normally keep some and feed some! Or you could eat them yourself.
Let the flower die properly (as the seeds grow bigger while this is going on) then bring the heads inside to dry off as it's quite late in the year now for doing outside. Once dried, ping out all the seeds and store somewhere cool and dry for next year.. You'll never have to buy another sunflower seed again :)
