If swapping this tap would you swap the isolation for a iso with a flat face. And the elbow for an elbow that is 15mm comp to 1/2" male?

This is what currently have

Could I pull the plastic pipe out of the tee and put a small piece of copper in? Then a flat faced iso valve.

I have a new tap to fit on this installation. Don't like screwing the female end of the flexis on to the sharp edge that should take an olive. Like to use 1/2"males to 15mm compressions. Or isos with a flat face on one side

If you want use flat faced isolation valves just replace existing iso and compression elbow.
Use existing nuts/cones I would personally add a smear of joining compound (for potable water) onto cones .
