Tile from middle of room, or middle of door?

It would be better to have a join where your laser line is. That will get rid of the two thin slivers of tile near the top and bottom walls in your photo.

In the other direction put the centre of a tile in the centre of the gap between the two walls. You will the end up with one full tile along the length of the room and large cut tiles in the doorway and near the opposite wall (I assume that your room is slightly less than 3 tiles wide)

Would you have any advice/top tips on how to cut around the soil pipe and inlet pipe at all please?

Assuming these are ceramic and not porcelain tiles:

Fix the full tiles, then use a piece of card to make a template for where the soil pipe and inlet pipe fall.
The inlet pipe is going to need a hole cutting with a diamond tile hole cutter and then the tile will need to be snapped into two parts so that one part can be fitted from each side of the hole. I would make this break vertical in your picture. Make the hole a few mm bigger than the pipe. Do this before you cut the bigger hole for the soil pipe. This is never going to be perfect but people don't spend a lot of time looking behind toilet pans.

Drill a hole in the tile near the edge of the soil pipe position, big enough to get the blade of a tile saw in. Saw around the edge of the soil pipe hole.

This tile is going to want to break so you will need to take care.

With a bit of luck the pipe in the bottom right of your picture will come on the grout line, I might adjust the tile positions slightly, if necessary, to ensure that it does come on a grout line to avoid having to snap another tile to fit two halves around this pipe.
 
Thanks for this, I’ve had a play around with the cardboard cuttings, how does this look?

I can see this being tricky to keep the tile in tact like you say, but because it’s behind the loo it won’t need to be perfect.

The grout line is fine as it will be with these cuts
