Ideally you should tile up to the hood. Other wise you'll have a bit of painted area that will get greasy over time and will not withstand a scrub.
it depends what hood you have, if its a square enclosed on right up to it, if its a that there fancy one that you can see behind the sides you cold take the hood off and tile behind to the top of the work tops then re attach the hood
