To be honest, I've never heard of anything like that in my life. I would be having words with him. If you have a plasterer in to do one wall you should be thanking him for his time by mid afternoon and then showing off his work to all and sundry the day after.
Plasterers use trowels, not sandpaper. Are you sure he's not a joiner?
