I am connecting just a cold water washing machine and they say to turn the hot water off but surely i need the hot water for washing dishes etc. What do i do?

you must be misinterpreting what is being implied rather than written , go back to basics, arew you fitting machine for the first time or is there one already connected, if one is already connecteddoes it have hot & cold, if it has both you need to switch off both valves, remove then follow instructions to fit new one, (you might want to consider getting a 3/4" blank cap for the unused hot valve,
if you are fitting for the first time iss there a cold valve to connect to, if so again follow instructions to connect machine

Thanks but surely if i turn the hot water off no hot water will come out of the taps supplying my sink

just turn the red valve off under the sink that leads to the pipe of wm.
