Turning off hot water unvented

How do I turn off the hot water at kitchen sink, as I want to change the isolator on the feed.

If I turn off the stopcock, the cold shuts off immediately and the hot slows down, but doesn't appear to stop - unless I'm being impatient.

I have a system boiler and Megaflow cylinder.

You are impatient. It will take a couple of minutes........but will recharge the internal air gap.
