Using joint compound (mud) as a general purpose filler

I find that I require filler occasionally throughout the year and when I buy premixed stuff, it dries out etc. for the next use. Someone suggested keeping the above in a tub and mixing it up as required.

Can I have you'r thoughts on this please.

I've checked this out on YouTube. Looks good!
Do you think I can use this for a part of the wall where I have ripped off coving? Thu surface is uneven in places and I assumed that it will need "plastering" but perhaps I could do it myself using this stuff if it's appropriate?
