Very uneven ceiling joists.

1920’s house renovating the lounge and after removing ceiling have found the joists to be all over the place.
After some reading up have decided to go the route of fixing up some cls timer at 90 deg to original joists, starting at low point and packing them out level.
Would 36 x 63 cls timber be ok?
That way only loose 36mm of ceiling height.
Spaced at 300mm apart.

You could just sister existing at level of lowest , very little height loss .
 
Thought of that but joists are all over the shop spacing wise.
Cross fitting them could get centres dead on so minimum cutting of plasterboard.
Dint mind loosing a bit of height as left with a 60mm gap at bottom of walls if i board them at current height.
Just cant see much info anywhere about timber/ screw sizes using this method.

2x2” would be fine .
