You wouldn't use plaster for block laying. The colour of the sand gives the mortar it's colour.
Not if you're normal, but the cretins who built this did do some very odd and horrible things, hence I have taken the plaster suggestions seriously.
 
My builder concludes that they used fairy liquid as a plasticiser, which was common in those days, which gives it the smooth and light colour look. The pink aspect - well our bedrock in this region is red (North West). And who knows what **** old bags of ****e they had at the time in the way of mortar mixes?
That makes sense. Red sand, highly frothed = pink.

It'll be fine, probably stronger than the blocks.
