I usually try and run the waste under the plyth. If this isn't possible is it ok to run higher up behind the unit. I think there is usually a 75mm void? Would then require the joiner to knotch the back of the units.

Yes. You have to do what you have to do.
However.... Beware if it will pass behind appliances as these now normally go all the way back to wall with no service space.
As long as there is nothing to impede or impact on the run behind the units then no problem with that. Most kitchen units have a service void for exactly that requirement.
