I've started to rip out the units in my kitchen and found a couple of interesting joints in cables. One was above a ceiling and is clearly the supply to the oven and hob. The other in the old back box is part of the kitchen ring, I'm not sure if it is a spur off the ring or part of the extended ring and until I've disconnected it at the consumer unit I'm not going to move it to find out.
I was also interested to see that the supply to the under cabinet lights ran at 45 degrees from the fuse switched spur unit (I removed it) and it had a 13a fuse. The connector wrapped in red tape is so I can still use the washing machine and all the wiring will be replaced.
How do people get away with work like this?

It's all very poor by today's standards (but might be very old) and, being charitable, it could have been done by a DIYer unaware of any rules.

People get away with it because nobody else will know about it.

It is turning into an "interesting" project. The more I reveal the more I dislike what I see.
The solution is fairly simply, every circuit for the kitchen will be rewired back to the consumer unit, I have wondered if any of the existing work was worth reusing but after what I've seen I'll not take any chances.
