What should Danfoss motorised valve be set to - AUTO or MAN?

I have two Danfoss motorised valves in my hotpress, and was wondering what AUTO and MAN means?

One is set to AUTO and the other is set to MAN, however I could have sworn that both were set to AUTO the other day. Since then we've had a plumber in fixing a pipe and he was doing something in the hotpress. Since then the water coming out of the hot water taps have been really hot!! Even though we haven't had the water heater on. Any ideas?

I flicked the valve back to AUTO and the water seems to be cooling down slightly, but I'm still confused.

We have an oil fired CH system.

leave it on auto, the manual setting keeps the valve permanantly fully open

They should be both set to auto.

When you say fully open - what does that mean? Was is taking water from the CH as well?
