What sort of tiling trowel?

I'm using 250 x 400mm tiles on solid walls which aren't bad but aren't dead flat. They wave about by a couple of millimeters. Bal Grip and Bal primer. This is a wet area.
I'm finding the 6mm square notches on the standard trowel don't give me enough squashing ability. I'm (over?!) fussy and want to get them completely flat. I really don't want to butter every tile as well as the wall.

What size notches would pros recommend for that tile size?

Presumably at some size you would go to "spots"?
Are all reputable adhesives equal in this respect?
