I have been told that one way to create the clay oven taste for pizza/bread etc is to bake on an unglazed quarry tile which absorbs moisture from the dough. Anyhow, where is the best place to find an unglazed quarry tile (which has not been treated with lead)?
I use standard floor tiles to line the oven. Heat oven to extremely high temp. and once the pizza is placed in the oven spray a few bursts of water into the oven using a plastic spray bottle. Works a treat.
I understand there might be lead and other nasty things in glazed tiles. I am looking for clay/terracotta as that seems a traditional material used for ovens and it might draw out moisture from the dough.
