Why does tile Adhesive colour matter?

My tiles are white and ceramic most of the DIY places have sold out of white adhesive they only sell grey. I already have some white grout. But if the adhesive is under the tile why does colour even matter?
 
It doesn't really, especially not with ceramic or porcelain tiles as the colour won't bleed through. Grey adhesive will be fine, just work cleanly and make sure you clean excess adhesive from your joints as you go (I always have a bucket of clean water with a couple of sponges and a few cheap toothbrushes in for cleaning as I go along). It's only when I'm tiling with travertine that I use a rapid set white adhesive.
 
The grey adhesive makes keeping white tiles clean while working easier, if you had white it would be easier to miss spills etc.
