Hi, we've just bought a new house and I have noticed some bits of wood in the brickwork. I'm guessing it's been put there when holes have been drilled in the wall to put wires in? Am I right?

Nope. They'll have been the original fixing points for the original timber doors and windows (before Rawlplugs and hammer drills existed :))

None at all. You'll get a better job if you can remove the wood, if it is really firmly in place then think about using flexible caulk rather than filler.

(And remember that they were always cut on the twist so that they wouldn't pull out when the wood shrank!)
