Undo the 4 screws, and the knob pulls away from the door.
It may, or may not pull the square follower bar with it. The follower bar can be threaded or grub screwed in place - sometimes on the knob that remains on the other side of the door.

The obvious thing is to remove the visible screws.
The spindle may be held into place via a grub screw which will need undoing on at least one of the knobs.
Are you replacing knobs for (lever) handles?

No, happy just to replace like with like (rest of handles are round).

If your putting like for like there then why replace it?
Take it off, polish is well and if needed recoat with laqcuer.
Replace the screws so that you only need 1 screwdriver to remove it not 2, either all cross head or all slot

The reason it needs fixing is that it is really stiff to turn, and doesn't pull the latch completely in - makes opening it very difficult.
I'm concerned soon I won't be able to open the door at all once it's been closed.
Will just lubricating cure this or do I need to replace the whole unit (including latch part) ?

Fault is more likely the catch being worn out , knobs have no working parts to fail.
Once you take the knobs off, look to see if the spindle is binding n the holes in the door. It looks like an old knob fitted to a new door. The springs in the old knobs may have broken.
If not, the mortice latch might be worn. You can buy a new Tubular Mortice Latch very cheaply. the old one will pull out, you can loosen it by tapping on the spindle. Measure the old one very carefully, different makes vary slightly in length. If you can get the same make as before it will be a bit easier.

Knobs, as opposed to handles require the deeper tubular latch. This is so that your knuckles clear the rebate when twisting a knob.
Handles = 64mm deep latch.
Knobs = 79mm latch.
