Can A Professional Plasterer Apply undercoat Without Battens

I was just thinking about this tonight as I was plastering:

Are there any experts out there who can undercoat a wall perfectly flat, level and plumb (lets say with hardwall) without the use of battens and featheredge? If so, how is it mastered? Years of practice? Or is it simply not possible?
