Pointing an old wall...from top or bottom?

Hi all,

I am about to start on pointing 2 sides of a single storey outbuilding, albeit attached to the house.

It's Victorian (with old uneven bricks) and will match with a weatherstruck finish.

I intend usung 4 soft building sand to 1 cement.

My question is having read different approaches, should I start from the top downwards or bottom upwards?

I intend only doing a few rows at a time. Walls are only 1.5 and 2.4 metres wide.

Are using weather struck or weather struck and cut? Might be better using lime mortar.

Cut out the joints, then start at the top, because if you start at the bottom bits of mortar will fall on your finished work.
