What would work best for tidying up new mortar? I've made a bit of a dogs breakfast cementing some granite rocks together to make steps on a garden terrace and want to smooth the mortar up a bit and remove some bits of excess and generally make it look a bit less like i've had a fight with a mixer!

There’s a reasonable chance of making it look a bit worse Tom - stone grinding discs being somewhat savage.
I guess the mortar is set?
Consider sanding discs with a tough oxide grit or maybe a stiff wire mop in an angle grinder - after ensuring the mop is designed to be used in a grinder and definitely have eye protection.

Silicon carbide abrasives work best on concrete and stone.
