Bit late now I guess, but sea buckthorne makes good "passive aggressive hedging" and will fill in gaps by itself [or, "spreads like nobody's business", to put it another way].
The size if a tree is governed by the vigour if the rootstock its grafted on to,the joint will be close to the ground.

Yep, the leaves are all wilted now. It is not looking good. Wull need to prune all the leaves.

Don't prune all the leaves, prune about two thirds, and give it a good soaking
Judging from the op's last post the tree is making its own decision.
