Blue stilton can vary a lot. It seems to mellow and become more complex and creamy as it matures. I don't like the very sharp ones.

The port is a great counter balance.

I don't mind some of the speciality cheeses like the one with cranberries in though.

They often use white stilton.

Can't beat a good strong Somerset farmhouse cheddar, with thr crunchy salt cristals in it... Yum with wifes home made plumb or apple chutney on freshly baked bread, food of the gods !
