Why do I get this when using filler?

Okay, I know this is not plastering... Please forgive me

However, whenever I'm using a filler type of product (including rolla nova) I get a type of speckled effect that I can't smooth out.

It happens if I use a little or a lot of product.

Please see the picture

I haven't sanded yet, that struggle to get fully smooth walls or what I consider smooth walls ready for sanding.

Am I looking for too much perfection or am I doing something very wrong?

Are you trying to skim a wall? Seems a large area for just filler. What are you using to apply? Also, as above, are you using it too dry?

The Dalapro Roll Nova stuff (applied using a roller and a speed skim blade). Just looking to smooth over a small wall at the top of the stairs

Is it a huge area where you have this problem?

I have had great success on surfaces like that with Toupret.

It's really easy to sand, I used a small off-cut of 18mm ply, wrap a bit of fine sandpaper round it and in a jiffy, it's smoother than a baby's bum.

Seems like it should be a good product. Maybe it's inconsistent with using the roller?
