As probably one of the leading scientists on here in astro physics, the answer is, we don't know..

In technical terms we don't know. We just get very confident that the way we're describing the universe is accurate.

Gravity, just a theory. Quantum Physics, just a load of theories, the big bang just a theory. Laws of physics, just theories.

All supported by huge amounts of experimental and theoretical evidence, but still theories.

We observe, we experiment, we decide what theory fits, we test the theory, and if it works - we accept it.

How do we know we have it right.

We don't, often we get it wrong. History is littered with theories, which were later proven to be wrong.
