I can't see a wiring diagram on the old one, I would guess the blue wire is neutral which is no longer required on new one. Put the neutral in a terminal block or tape up for future use, and just use red and yellow wires. I am sure if you look carefully it will say the blue is N but can't read on picture.
 
I don't think that blue is a neutral. That mechanical device would not require it. It's just an 'open' sense position. It still isn't required though. Red in one, Yellow in the other any way round does not matter.

Red and yellow to the two top terminals in the new one
Blue is not required and must be put into a separate insulated terminal block.

I recall its for the Accelerator resistor, something to do with the Bi metallic strip switching

It's still not a Neutral though, or would be a big bang (and blow it off the wall) when room was cold.

Mate asked me to look at his when I was about 15. See the earth has been used in a terminal.

"That's not right" so put earth to earth. Turn it on. BANG.

I'm 44 soon and none the wiser.

Sure you will find it should be a Neutral.
As for your other encounter, as discussed elsewhere it seems to be a recurring thing for plumbers and others to re-purpose an Earth wire as something else including Live cores, resulting in the unaware being caught out :)
