Any suggestions on a more comprehensive assessment I could do? Because there are 100% wet patches. I just used the meter because it would be hard to see the patches on photos

That meter is not calibrated for anything other than timber. That's a fact despite any settings it has. And you can put it on almost any material and it could get a reading, but that's not in itself an indication that there is excessive damp.
Plus you're measuring the surface only, and salts, wallpaper paste and the kettle you just boiled are all skewing the readings.
It's how the readings are interpreted that is crucial. And that needs training and experience.
The best thing to use is your eyeballs, and you need to be seeing prominent damp stains, yellow/ brown and maybe white salts. Those photos are not showing any.
Penetrating damp would be visible after rain and then dry off - leaving tell tale marks. Again, the photos don't show any.
