Yep i always put 2 coats on and always do a fresh mix for each coat ,the only time i ever did 2 coats from the same bucket was either a very small wall or if i ran out on the first coat and just needed a hawk full to finish the wall .

To try and plaster using only one coat is barmy and counterproductive.

As in all plastering, the first coat will deal with suction and scrims etc, the second coat is easier to apply and affords the plasterer time to work a good finish.

A good tip:

When doing smaller ceilings or walls, keep a bit of the first mix in the bucket, i.e. scrape what plaster you don't use back into the mixing bucket or don't empty it all out onto the spot.

Then mix the second coat with the first coat muck and whisk it all together.

This way the ceiling/wall will firm up quicker. ;)
