If a 7.5kw shower is fed using a 10mm cable to an isolating pull cord switch and from there to the shower in 6mm, would this be considered bad practice?

Even though the cables are of different size the 6mm cable has sufficient rating

Yes it is. run the lot in 10mm², then you can have a 10.8kw shower

I appreciate to "future proof" the installation ideally you would run it in 10mm

If however, this setup was already in place and customer didn't want a more powerful shower, would you recommend then that the customer should remove 6mm and replace with 10mm?

If both cables are capable of carrying the full load, why is it wrong?

Its not inherently dangerous, or theoretically wrong, to keep it how you describe, as long as the circuit protection is adequate for the 6mm².

It is, however, considered bad practise, it will confuse anyone who works on the circuit in future.
