25mm MDPE leaks water but not air, how?

Maybe because air (@ 2 bar)can be compressed and water cannot, so water will force through a closed split.No such thing as fluke, M8
When I thought my kit wasn’t working I opened a fitting and it popped off like a Champaign cork and steam came out, I thought the water might have been compressed by the air.
