Obvs it's sat on carcass, which isn't waterproof so I'd like a worktop added to finish it.

A waterproof seal between stainless and any additional worktop is a must.

I thought conventional worktop or even a 600x600 composite tile on a ply base, if I can get one that size (not sure ceramic or porcelain will be suitable).

Any pointers?

Thank you.

You want to put a worktop on top of the stainless steel sink unit? Or add a bit of worktop between the sink and the hob, above the fridge? Assuming the latter then a batten fixed to the left hand side panel to support that edge of the worktop, a batten across the back on the wall and then a new kitchen end panel fitted between the fridge and the oven to support the right hand side. A silicone seal between the sink and the new worktop to seal that but that joint will always be vulnerable, you would normally avoid having to have a joint in that location.

That's what I said to do also.
