I'm preparing to have my property insulated throughout. The internal walls are stud and the ceiling and floors are wood joists. Are there any rules about what kind of insulation should be used - foam boards or rockwool?

No rules as such, as long as the insulation value achieves the minimum set out in the Building Regs.
But, some insulation products are more practical than others, depending on where they are applied.

There are several standards relating to suitability of a given insulation for a certain situation.

And certain types such as urea-formaldehyde are controlled, and should not be used in some situations (or all situations if you are allergic to it)
