I’m in the middle of destroying my kitchen at the moment I have removed my wall units and old tiles. On removing the tiles the plaster has come away. I have also opened up a door way to accept a lager fridge freezer. My question is should I just remove all the plaster and go back to the brickwork.

I’ve never plastered I’m my life I completely understand that it is an art form and takes loads of practice. And me just watching YouTube and TikTok videos isn't going to make me a pro. I'm quite a hands-on person and would like to give it a go myself. Worst case ill have to remove it all and then call someone in and admit defeat.

I don't really want to use plasterboard so would like to use Gypsum Thistle Hardwall Plaster if I have to go back to brick

I understand it's hard to tell from pictures but if anyone can give me somectips on if I shod just go back to brick and start again or not.

I'm a DIYer, my choice is sand/cement render (screeds and fill in) with a multifinish skim. It's much easier for a beginner than plaster.
 
I would personally take it back to brick .
Going to get a even consistent finish .
Really depends on how the wall is going to be finished,paint ,tiles .
