The other reason I want it is because for 4 months in the summer when I go in for a shower I don't need to even turn the light on as it's light enough. But currently I'm forced to turn the light on to get the fan to work.
A relay to trigger the timer perhaps (if the shower is electric) or even a humidistat?

Replacing/renewing the fan might still be the simplest option.
But methinks the contributors have demonstrate to the OP that there maybe many solutions.
Easy way, would be a pipe stat, on the hot supply pipe to the bathroom. Someone runs HW, that triggers the stat, stat triggers the fan. Timer counts down, from when the pipe stat cools down.
