Bend in taps

Is there any reason why taps are plumbed in with a bendy bit going down before coming up through the floor?
Can you just go straight up with an elbow?

Do you mean Traps, not taps. never seen water pipe looping down then up!
 
If it is TAPS - is the "bendy bit" ribbed? If so then it sounds like someone has used bendy pipe to make a bend rather than elbows. There is no reason I can think of that would mean you cannot replace these with elbows or whatever fitting you need to get where you want to get.

No, its standard 15mm copper pipe. The main run goes just under the floor board, the line to the tap T's off at a downward angle (-45 degrees) and the spur then u-bends back up through the floorboard to the tap.
It could just be to save a joint or maybe its just easier to do? So long as its nothing to do with water flow or airlocks because I'm replacing it with an elbow.
