Black muck in my kitchen gully

Had a small blockage in the kitchen gully this morning, I pulled out a lot of black muck/waste and it didn't look to pleasant. Why is it black and so smelly?

Probably because is consists of food waste including fat & grease which decomposes releasing, amongst other things, hydrogen sulphide.
 
Because it is; simple as that. But it won't normally be the fat, that solidifies in contact with the cold stone, and you can scrape it out in lumps. I have to do that regularly at one of the block of flats I maintain.
 
I found a couple of drops of tea tree oil (which is antibacterial) is a cheap and easy way to stop the smell in an outside drain.
