Boarding over plank subfloor

I would like to board over a kitchen plank subfloor (after having removed the thin chipboard) and then install floating luxury vinly tiles over it.

Which type of boards would you use?

Plywood or cement board?

Would 12mm thickness be okay?

Assuming that your planks are reasonably flat (not cupped) and that the boards are fairly tightly fitted you'd probably actually get away with 1/4in (6mm) or 3/8in (9mm) hardwood plywood. Kitchens (as opposed to bathrooms) aren't normally so damp that you need to use cement board
 
Thanks mate. If that’s the case I would probably prefer to use the 6mm so that the final floor will be flush with the carpet in the rest of the room.

That would be fine.
I've always used 6mm hardboard under vinyl and carpets making sure I left a gap at the edges when fitting carpet grippers.
Much cheaper, but just as effective, than plywood as a base material.
 
As far as I see it the main advantages that plywood has over hardboard is that it is far less likely to wick-up moisture from the floor boards - not an issue if your building is dry to start with - and it is better at not telegraphing discrepancies in the original floor boards (again more important if you are starting from a potentially damp building /floor) and also that it is stiffer and therefore somewhat easier to cut than hardboard in my experience. Your right, though, it does cost more
